Wild Ferment for Preservation with Sandor Katz image

Head out for a day at Martin Boetz’s paddock to plate restaurant, Cooks Co-op and join Sandor Katz, Sharon Flynn and Kristen Allan for a day of Wild Fermentation.

Starting with Sandor and a talk on wild fermentation, Sandor & Sharon will explore the wonder and magic of milk kefir - from labneh to whey soda and creme fraiche that you’ll shake into butter to wrap and take home. We’ll also have the passionate Kristen Allen demonstrate her fresh milk curd wrapped in fig leaves.

We'll then get our hands into the thick of it and make a kraut with veggies from a nearby garden. You'll go home with a Fowlers Vaccola jar filled to the brim, ready to ferment, a milk kefir cultured butter, a whey soda and your own milk kefir culture to last generations with the recipe's so you can do it all again with confidence at home.

Martin and his team will put on a beautiful lunch for everyone where you’ll get to try all the ferments from the days class.
