New year, old friends. Two years on from her last Carousel appearance, we’re delighted to welcome Akané Monavon back into the fold.

Born in Burgundy to a French father and a Japanese mother, Akané is a chef with a truly international perspective. Working under legends like Virgilio Martínez and Dominique Crenn, she’s spent the last fourteen years cooking in renowned kitchens the world over - New York, Tokyo, Paris, London, Reykjavik, San Francisco and Lima - developing a laid back, French-Japanese style that’s delicate, understated and out-of-this-world delicious.

Akané joins us following a successful six-month residency at Fulgurances in Paris. She’ll be opening her first permanent restaurant in the French capital later on this year. In the meantime, join us for more extraordinary creations such as ‘Tempura Lobster dusted with Sumac’ and ‘Szechuan Duck Breast with a Soy, Sesame, Orange Zest and Honey dipping sauce’.

When the winter frost thaws, Sven-Hanson Britt will open Oxeye in rural Derbyshire, his hotly anticipated debut restaurant. Sven's farm-to-table cooking is inspired by his time spent at Blue Hill Farm, Mugaritz, Michel Bras and The Ritz, and brings together the traditions and craft of British farming and cooking with a beautiful Japanese kaiseki aesthetic.
