Meet Your Instructors

Megan Burditt | Exercise Physiologist, Crosby Wellness Center
Megan Burditt is passionate about bridging the gap between healthcare and fitness and working in medically integrated programs. She received a bachelors in Exercise Science from USF and is a registered Exercise Physiologist with the American College of Sports Medicine (ACSM). In Tampa Bay, she gained experience in corporate/worksite health promotion and hospital-based medical fitness programs with BayCare Health System. Her passion lies in empowering individuals and doctors to utilize exercise for disease management and prevention.

Kate Castor MS, RD, LDN | Nutrition Program Manager, AdventHealth's Metabolic Health Institute
Kate has a strong background in research, exercise physiology, and preventive health. Her experience spans Florida State University, the University of Florida, and Duke University, where she worked with high-performance athletes, translating complex nutrition and physiology science into practical, sustainable habits. Kate specializes in helping busy professionals optimize energy, body composition, and long-term well-being through evidence-based nutrition strategies.

Chef Edwin Cabrera| Executive Consulting Chef, AdventHealth
A native of Puerto Rico, Chef Edwin started his culinary career after dancing classical ballet for fifteen years. Upon graduating from Scottsdale Culinary Institute, he received his AA of Occupational Studies in Culinary Arts and Sciences, and Restaurant Management. In 2025, he became a Certified Culinary Medicine Professional through the American College of Culinary Medicine. He has been Executive Consulting Chef with AdventHealth since 2011 and has a passion for developing healthy recipes that target different diseases and promote healthy eating with the collaboration of registered dietitians. Chef Edwin has authored and styled food for cookbooks and provides cooking demonstrations for several organizations across Central Florida to inspire attainable healthy eating.

Becca Schmidt| Certified Yoga Instructor
Becca Schmidt, an E-RYT500/YACEP, has been teaching yoga and yoga fitness for 18 years. Her certifications include Yoga Therapy for Seniors, Prenatal Yoga, Hands on Assist, Yoga for Dance and more. She holds the experience level accreditation to teach other yoga teachers.

Amanda Crane APRN, FNP-BC, MS | Family Nurse Practitioner, AdventHealth
Amanda Crane APRN, FNP-BC, MSN, is an advanced practice registered nurse with extensive experience caring for patients with a wide variety of chronic metabolic health conditions including diabetes and its associated comorbidities. She joined the AdventHealth Medical Group Health Optimization Center at Orlando from a private family practice in Central Florida, where she cared for patients with acute and chronic conditions including metabolic syndromes. Prior to that time, Amanda was a full-time registered nurse at UF Health Shands Hospital in Gainesville. She is a proud graduate of the University of Florida, where she earned both her Bachelor of Science in Nursing and Master of Science in Nursing degrees and was awarded the Vergie Pafford Award for Excellence in Community Health Nursing in 2010 and earned Preceptor of the Year honors in 2019.
