Schlossgut Bachtobel has farmed the south-facing slopes of Thurgau's Ottenberg since 1784, and its geology, history and winemaking all come through in the glass. The soil was shaped by Wurm moraine, rubble left behind as the glaciers retreated at the end of the last Ice Age, giving a sandy loam with a chalk and skeletal content often compared to Burgundy.

Six hectares are under vine, mostly Pinot Noir, farmed organically under Bio Suisse guidelines. Two of the estate's original wine presses date from 1584 and 1729, and the family has recently brought a restored 16th-century beam press back into use for their Pinot Noir No 3.
