Do you know your mojama from your capellans? Spain has an amazing array of dried fish products - many unknown to a British audience.
These salty treats are an ideal companion to the earthy flavours of natural wines, and who better to discuss pairings than celebrated chef of Spanish food Owen Morgan and wine writer Kate Hawkings?
Owen is the co-founder of The 44 Group, the award-winning hospitality group behind Asador 44, Bar 44 and Parador 44. A passionate champion of Welsh produce and independent hospitality, Owen has become one of the UK’s leading voices on the challenges and opportunities facing the restaurant industry. Through his restaurants, hotel, media appearances and industry advocacy, he continues to champion innovation, resilience and the future of hospitality in Wales and beyond.
Kate Hawkings is a writer specialising in food, drinks and travel. Her work has appeared in consumer and trade press including the Financial Times, Guardian, Sunday Times, Times, Telegraph, Decanter, Club Oenologique, Harper’s, Drinks Business, and Food & Travel. She has been Olive magazine’s monthly wine columnist since 2015.
This shared tasting experience will review a selection of the unknown and unusual, each twinned with a natural wine, while Owen talks us through the joys of discovering new flavours and textures for his restaurants.
