Instructor: Master Chocolatier Elyissia Chinchilla
A full-day overview of what you need to know about fine chocolate making. In this hands-on class, you will learn proper tempering of chocolate and molding, including designs and coloring. Learn from Elyissia Chinchilla, the Chick-n-Charge of 2 Chicks with Chocolate, Middletown, NJ, established in 2009. Over the course of six hours, we will dive into multiple topics via explanation and demonstration with time for interactive Q&A.
You will learn:
• The difference between couverture / fine chocolate / cheaper chocolate – specifically about the viscosity/fluidity and the difference that cocoa butter percentages make in fine chocolates and working with it.
• The tools needed for fine chocolate work – a quick overview of the environment, area temperature, and humidity.
• Chocolate tempering – reviewing different methods for efficiency.
• Chocolate molds – the differences, how to care for them and prep them for filling.
• Coloring chocolate – tempering cocoa butter, techniques, costs.
• Shelling chocolate molds
• Filling and capping chocolate bonbons, scratch caramel, and ganache versus faster methods and profitability.
• Mise en place workflow for time savings and efficiency with chocolate storage for finished product and shelf life.
Skill level: beginner to intermediate
Take away:
• students will take home the chocolates they create in class and knowledge to re-create them
Age Requirements: The minimum age for this class is 18 years old or contact us if the student has prior chocolate experience and knowledge.
Breaks: Students will be given a 30-minute break halfway through the class. We encourage students to bring their own lunch, as local restaurants can get busy.

What do you do when life hands you lemons? Well, if you're 2 Chicks with Chocolate founder Elyissia Wassung's mom, you by-pass the lemonade thing entirely and go straight for the chocolate! When a disabling car accident left her unable to commute to work, Elyissia's mom turned to making chocolate in her kitchen as a way to bring home the bacon! Elyissia would load up her shopping cart and venture down her Queens, New York, blocks going door to door to sell all she could until one day some neighborhood bullies stole her candy and her money! She learned then that the risks of owning one's own business were greater than she thought, but by then she was already bitten by the entrepreneurial bug and well-launched in the chocolate business!
