Celebrate the beauty of autumn by learning how to transform simple cupcakes into stunning edible floral arrangements. Inspired by the rich colors of the season, this hands-on class will teach you how to pipe elegant buttercream flowers that are perfect for Thanksgiving tables, fall weddings, birthdays, and special celebrations.
Whether you're completely new to cake decorating or looking to expand your buttercream skills, this class is designed to guide you through every step. You'll learn professional piping techniques while creating a beautiful collection of seasonal floral cupcakes to take home.
All classes are booked on a first-come, first-served basis and are subject to our class policies. Please review our policies before reserving your class.
In this 5 hour class, you'll learn to:
- Color buttercream using warm fall-inspired tones
- Prepare piping bags and work with a variety of decorating tips
- Pipe realistic buttercream flowers including roses, chrysanthemums, ranunculus, and seasonal blooms
- Create leaves and floral fillers
- Arrange flowers into elegant cupcake designs
- Learn techniques for achieving clean, professional finishes
Skill Level: Beginner to Intermediate
Students will decorate and take home a dozen beautifully designed floral cupcakes, along with the techniques and confidence to recreate these designs at home.
Minimum Age Requirement: 16 years old.
Breaks
Students will receive a 30-minute break halfway through class. We encourage everyone to bring their own lunch.

Photography & Video Policy
Photographs: We encourage students to photograph and share their beautiful creations on social media. However, sharing class materials or step-by-step instructional content is not permitted and may affect eligibility for future classes.
Videotaping: Not permitted.
Instructor: Iris Stiverson
Iris Stiverson is a cake designer and sugar artist. She was born and raised in Hermosillo, Mexico, and moved to Arizona in early 2006. Growing up, Iris was captivated by bringing color and happiness to her creations.
She discovered her love for cakes when her daughter, Brianna was born. Inspired by her daughter, Iris was devoted to creating the most beautiful cakes. She wanted her daughter to see what is possible with passion and our God-given talents.
As her passion grew, she began taking classes at The Wilton School of Cake Decorating and Confectionary Art and became certified as an instructor in 2014. Afterward, she continued her education getting certifications in buttercream, pastries, and macarons, expanding her palette in the world of sugar! She also took courses with famous cake artist, Chef Oss! In 2021, she began taking decorating classes at the Adrian Cabrera Academy of Sugar Art earning her certification in Pastry and Sugar Art, Management Restaurant!
As she continues creating new ideas for cakes, her hobby turned into a profession. Iris loves sharing her passion with many and opened a small home-based business that continues to thrive today.
She is excited to join the eclectic and talented group of instructors at The Confectionery Academy and share her skills and love of cake art.
