From Burgundy to the Loire, Jura to Oregon, Germany to California, reduction is the secret handshake connecting a remarkable percentage of the world’s most sought-after white wines. We talk terroir and chase reduction, fair to say, and so a full After Hours’ meditation on reduction feels in order. There will be d’Auvenay.
We’ll begin with comments on reductive winemaking: what reduction actually is, how it develops, and how growers pursue it across regions and varietals. After, nearly twenty reductive whites from around the world will take over the heavy lifting. Burgundy leads the way (d’Auvenay!, Lamy-Caillat, Guffens-Heynen, Henri Germain among many others), Loire icons Richard Leroy and Stéphane Bernaudeau provide Chenin counterpoints, while gems from the Jura, Germany, California, Oregon and the Canary Islands add global reach.
And yes, there will be d’Auvenay.
