Foraging and wild soda workshop with Chloë Dempsey
Join Chloë Dempsey for a hands-on workshop that combines the art of wild fermentation with the joy of foraging.
Start the morning with a guided walk through Myross Wood where you will learn to identify and gather edible plants, herbs, and flowers traditionally used in cooking and fermentation.
Head back to the Big Tent and learn to craft your own seasonal wild fermented soda using foraged ingredients, before sitting down for some light refreshments.
No prior experience needed — just curiosity and a love of the outdoors.

About Chloë:
Chloë Dempsey is a horticulturist from North Cork. She studied permaculture for two years at Kinsale College and has worked, and continues to work, on market gardens, private gardens, and in plant nurseries. She previously worked as a fermentation assistant in the Fermentation Shed at Ballymaloe Cookery School, where she learned about kombucha, water kefir, milk kefir, sauerkraut, and the wonders of bacteria and yeasts.
Chloë works with community gardens and organisations such as Regenerate and CECAS, and has also worked with Common Knowledge as a workshop facilitator, sharing her passion for foraging, fermenting, and gardening.
She loves all things food and nature. She especially enjoys creating potions and recipes in her kitchen, partly for health, but mostly for the joy of eating good food and sharing life with her loved ones.
