As the days turn crisp, churmur presents purab — our carefully curated autumn–winter menu, bringing the warmth of Eastern India to the table. Smoke curls from clay pots, mustard hums in the pan, and stories travel from Bihar’s paddy fields through Bengal’s plains to the misty hills of the Northeast.
Guest chef Neha (of London’s Michelin-starred Hide) brings her Bihari roots to the fire, in conversation with churmur founder Vatsala’s memories of Calcutta and Shillong. Together, they craft a menu that’s both familiar and new — heirloom grains, open-fire cooking, and the quiet heat of mustard that lingers.
We begin with small plates that speak of home — the rustic slow char of Bihari chokhas, the sharp surprise of Khasi chutneys and pickles, and the gentle spice of Bengal and Odisha’s beloved street favourites, ghugni and alur dom — all served with nutty, spiced sattu flatbread.
At its heart lies a slow-cooked Champaran Handi (mutton or jackfruit) — a rustic yet refined dish that captures the essence of Bihari home cooking. Traditionally sealed and cooked in its own juices and steam, the handi technique coaxes deep, smoky flavours from the meat (or jackfruit) without the need for added water or stock. The result is intensely aromatic and tender, its warmth carrying the unmistakable signature of slow fire and patient hands. It’s served with fragrant heirloom Joha rice from Assam’s paddy fields and a Khasi radish salad speckled with perilla seeds and the crunch of black Manipuri rice.
We close with winter’s indulgence — a golden Malpua, one of India’s oldest desserts, reimagined across the East. Served with a light saffron chantilly and a Cherrapunjee orange–honey glaze, it’s a sweet, soft, and unapologetically nostalgic finale.
