Join Corkdorks for an exclusive tasting of Masumi Sake, produced by Miyasaka Brewing Company in the Suwa highlands of Nagano Prefecture since 1662. Suwa's cold winters, pure mountain water, and famously clean air (the same conditions that made it a center for precision manufacturing) give Masumi's sake its signature clarity and balance. The name itself — "Mirror of Truth" — comes from a national treasure enshrined at nearby Suwa Taisha Shrine.
Masumi is also the birthplace of Yeast No. 7, discovered here in 1946 and now used by sake breweries across Japan for its clean, food-friendly character. We'll taste through the range that built that reputation — from the elegant, yamahai-style Nanago to selections from Masumi's flagship four-color line (AKA, KURO, SHIRO, KAYA), each brewed with a different expression of that same No. 7 Yeast. Guiding us through it all are two people who know this sake better than anyone in the room.
Hugo Chan, representing Masumi directly, will share the brewery's story — including its post-war reinvention under master brewer Chisato Kubota, its first National Sake Competition win in 1943, and its journey to becoming one of the first Japanese sake makers to exhibit at Vinexpo in Bordeaux. He'll be joined by Chris Johnson of World Sake Imports, one of the most respected voices in American sake education, who'll break down how to taste, pair, and think about sake the way the pros do.
Whether you're a sake newcomer or already have a favorite tokkuri at home, this is a rare chance to taste through a legendary house with the people who actually make and import it — with skyline views to match.
