Edible Magazine cordially invites you to an Argentine Dinner prepared by Chef Pablo Lamon, a part of our 'Use My Kitchen, Tell Your Story' dinner series, showcasing chefs who have immigrated to the United States who will tell their stories through a series of dishes, using food as a tool to find common ground and foster understanding. The kitchen space and venues are so kindly donated by area restaurants, wineries and individuals who open up their doors and encourage these stories to be told. Presented in partnership with Travel Paso, all of this season's dinners will take place in Paso Robles wine country.
Chef Pablo was born in Buenos Aires, Argentina and at the age of 18, he began his culinary journey. He has worked at award-winning hotels in Argentina, Uruguay and the United States, traveled the world cooking on luxury cruises, and worked for Michelin-starred chefs. He is perhaps best known to a wide audience of foodies thanks to his time on Bravo's Top Chef, season 16. Chef Pablo opened his own restaurant Nativo Kitchen & Bar at the newly renovated Conrad Hotel Miami, and in 2021 co-founded Lamon Culinary Group, a catering company dedicated to high-end gatherings. He is also a culinary consultant in Turks & Caicos.

Welcome bite Grilled shrimp
Apple-pear foam, blood sausage.

First course King crab with humita en chala
Traditional Argentinian corn ragout (humita). Lemongrass-butter king crab leg sous vide. Chipa cheese bread.
with 2022 Brecon Estate True Acacia Head Albariño
Second course Ossobuco empanada
Six hours braised ossobuco. Rosemary infused empanada dough. Cumin aioli.
with 2021 Brecon Estate Malbec
Third course Locro
Braised lamb leg, chorizo, sweet potato, green peas, white hominy corn, beans, chorizo colorado oil.

Fourth course Queso y dulce
Goat cheese (crotin) cheesecake. Jasmine tea-apricot jam.

Fifth course Chocotorta
Petit gâteau: “Chocolina” chocolate base. Dulce de leche & Sour cream mousse. Chocolate-coffee ganache. Strawberry gel.

WINE
The evening's meal will be paired with artisanal wines from Brecon Estate, a highly acclaimed boutique winery that produces small-batch, premium wines. Hand-crafted by an award-winning, international winemaker, each wine has an individual story to tell and can typically only be found in their westside Paso Robles tasting room. This specially curated flight has been selected by Brecon’s founding winemaker as the perfect complement to Chef Pablo’s creations.
OUR HOST
This dinner is generously hosted at Hartley Farms located on 37-acres in the fertile, rolling hills of San Miguel, just 15 minutes from downtown Paso Robles, where organic stone fruits, nuts, and grapes are grown.
