Over 6 consecutive Thursdays at 7:45 pm (CET), you will learn to understand the language of your body and explore the key principles of Ayurvedic nutrition that support health, balance, and wellbeing.

Through practical insights and interactive sessions, you will discover how food influences digestion, energy, and overall vitality, and how to make choices that support your unique constitution.

Eva Dusch and Eleonora Porcaro, Ayurveda practitioners, will guide you on this journey in a dynamic and engaging way, sharing practical knowledge that you can easily apply in your daily life.

Week 1 - Your body & digestion
‘You are what you digest’
- What is Ayurveda?
- The Ayurvedic principles behind every bite: doshas, tissue, digestive fire
- Why digestion matters even more than nutrition
- Food becomes our body
- Understanding the difference between hunger and cravings
- Daily and seasonal rhythm and how to adjust your nutrition accordingly
You receive: Your daily digestion self-check sheet
Homework: Try three different breakfasts during the week and observe how they make you feel. Record your experience and share your observations in the next session.

Week 2 - The healing power of food
‘There’s no such thing as ‘best food’; for whom and when?”

- Sharing your breakfast experiences from the week
- The six tastes and why every meal should ideally include them
- Understanding how food affects you by learning its qualities (hot/cold, dry/oily, heavy/light, etc.)
- How food influences the mind, body, and emotions
- Why warm, moist food plays such an important role in Ayurvedic nutrition
- What real nourishment is and how to recognize it
You receive:
A reference sheet with the 6 tastes
Homework:
Cook a balanced Ayurvedic meal including the six tastes and share your experience with the group.

Week 3 - The game changer
‘It’s better to have strong Agni and eat poor food than to have weak Agni and eat good food’ 
- Food combinations and what your digestive system does not digest well
- Why some “healthy foods” can still cause digestive problems
- Herbs and spices and how to use them in everyday cooking
- Spices as digestive medicine
You receive:
A reference sheet of herbs and spices and their qualities
Homework:
Create your own Ayurvedic spice blend and experiment with it during the week.

Week  4 - Level up your food
‘Ayurveda would never promote a fat-free diet’
- Bringing more variation into your eating habits through experiential knowledge of different food groups
- Grains
- Fats (good and bad oils)
- Fruits & Vegetables
- Meat & Fish
- Dairy
- Ghee and its special role in Ayurvedic cooking
- How to prepare meals for different constitutions and needs (Vata, Pitta, Kapha)
You receive:

- A reference sheet with the properties of foods in each category
- An Ayurvedic pantry list
- A seasonal food guide
Homework:

- Make your own ghee
- Cook one meal adapted for Vata / Pitta / Kapha

Week  5 - Creating your own Ayurvedic kitchen & cleanse 
‘There is no such thing as Ayurvedic food — only Ayurvedic cooking’
- Why it’s not only what we cook, but how we cook
- Kitchen set-up & cooking tools
- Meal planning & food preparation
- Fresh food vs. re-heating
- Fasting, kitchari, and gentle Ayurvedic cleansing

Homework:
Try a one-day Ayurvedic cleanse

Week 6 - Integrate the learnings in your daily life
‘True healing happens when we nurture the whole system’
In this final session, we make sure all the learnings from the course are well integrated. You will have the opportunity to reflect on your personal experience, share insights with the group, and clarify any remaining questions.
Together, we explore how to sustain Ayurvedic nutrition in your daily life in a simple and practical way.

A collection of Ayurvedic cookbook tips and inspiration.

ABOUT THE HOSTS

Eleonora Porcaro
Eleonora has been devoted to the study and practice of Ayurveda since 2020. Over the years, she has developed a deep passion for nutrition coaching, advocating for food that is not only delicious to the palate but also nourishing and supportive of optimal digestion. After graduating from the Ayurveda Academy the Netherlands, she is currently expanding her clinical skills under the guidance of vd. Sayali, experienced doctor from India, who has helped many individuals restore their health through Ayurvedic medicine. Eleonora has spent several years working as a retreat chef, delighting her guests with memorable, flavorful, and healing meals. Her path is to make the profound wisdom of Eastern traditions accessible and practical for Western lifestyles, by translating Ayurveda into something that is easy to understand, integrate, and truly live.

Eva Dusch
Eva weaves her background in journalism with the timeless wisdom of Ayurveda and Jyotish. After more than a decade of self-study and personal healing, she began her formal Bachelor’s studies in Ayurveda in 2019, soon followed by her path in Jyotish (Vedic Astrology). She continues to study under her principal teacher in India, Pt. Sanjay Rath, who holds an unbroken lineage of Jyotish masters spanning over 500 years, shaping the depth and integrity of the knowledge she shares today. Her work translates these ancient teachings into language that resonates with the modern mind and heart—making them practical, grounded, and accessible. She approaches Ayurveda and Vedic Astrology not as rigid systems, but as living sciences—an art of living that expands awareness and supports choices aligned with one’s true nature.
