The Mouldy Boiz are back.

There are more microbes in a teaspoon of our soil than there are people on Earth, and most of them are busy. This is a day spent following what they get up to, from the field to the plate.

We've reassembled the supergroup of microbial masters to guide you: Robin Sherriff, founder of Slow Sauce and The Fermenters Guild; Sam Cooper AKA Chef Sam Black; microbial historian James Read; and food biochemist  Dr Johnny Drain. Expect a day of hands-on experiences, farm produce being put to unusual use, and heaps of fermented foods to taste.

You'll walk the market gardens exploring fermentation potential, get hands-on with native grains and Japanese fermentation techniques, hear how human evolution is bound up with the history of fermentation, then sit down to a lunch cooked straight from the group's own books. The day closes with the panel taking questions from the floor, run in the spirit of Gardeners' Question Time.

ON THE DAY YOU WILL:

  • Walk the market garden and see where fermentation actually begins, with Sam Cooper and Tommy from Farmacy
  • Get hands-on transforming native grains with Japanese fermentation technique, led by Robin Sherriff
  • Hear how fermentation shaped evolutionary human history from James Read
  • Share a lunch cooked from the group's own books, with their personal ferments to taste alongside
  • Put your questions to the full panel, hosted by Dr Johnny Drain

Spaces are intimate and intentionally limited.

Ticket Price: £150. Includes the farm tour, the fermentation workshop, both talks, a lunch cooked from the group's own recipes, and a tasting of their personal ferments.
