Discover the living world of kombucha
Kombucha is one of the world's oldest fermented drinks. Originating in East Asia over 2,000 years ago, this sparkling tea has travelled across cultures, evolving into countless local traditions while remaining powered by the same remarkable partnership between yeast and bacteria.
Today, kombucha has become a symbol of the modern fermentation movement, but behind every bottle lies a fascinating story of microbiology, craftsmanship and patience.
During this hands-on workshop, you'll discover how a simple mixture of tea, sugar and a SCOBY transforms into a vibrant, naturally sparkling drink full of complexity. We'll explore the history of kombucha, understand the science behind fermentation and learn how to confidently brew and care for your own culture at home.
Together, we'll prepare your first batch of kombucha, discuss the fermentation process step by step and discover how to create endless flavour variations using seasonal fruits, herbs, flowers and spices.
Along the way, we'll taste different kombuchas and other naturally fermented beverages, exploring how small changes in ingredients, fermentation time and secondary fermentation can completely transform the final drink.
Whether you're completely new to fermentation or already brewing at home, this workshop will give you the confidence to continue experimenting long after you leave.
Beyond kombucha
Kombucha is only one member of a much larger family of fermented drinks.
During the workshop, we'll also introduce you to related fermentations such as ginger bug sodas, water kefir and seasonal fermented beverages. Understanding the principles behind kombucha opens the door to a whole world of naturally fermented drinks that can be adapted to local ingredients and your own creativity.

Each participant prepares and takes home their own kombucha starter together with the knowledge and confidence to continue brewing at home.
The workshop is given in English, with live translation into French or Dutch whenever needed.
