The goat is officially out of the bag.
This December, Fermenthings and Beer With Me, with the support of Stichting Carnivale are joining forces for the first Carnivale Brettanomyces Bruxellensis, three days dedicated to wild beers, mixed fermentation and our favourite unpredictable yeast: Brettanomyces.
For one weekend, we want to bring together brewers, fermenters, beer lovers and curious drinkers around everything that makes wild fermentation so fascinating. Not only drinking it, but talking about it, cooking with it, learning from the people working with it and, inevitably, drinking a little more of it.
The Carnivale starts on Friday evening around the table, with a special fermentation dinner and beer pairing.
Saturday is the big day. During the day we'll host talks, lectures and encounters with brewers and other people working with wild fermentation, before moving into an evening of beers, food and festivities at Be-Here.
A festival about wild beer probably shouldn't end on Saturday night, we'll meet again on Sunday morning for a proper hangover breakfast, with fermentation doing its best to put everybody back together.
And because Carnivale wouldn't be a carnival if we would not have secret events planned that will or will not fuck up the whole planning, so stay tuned and keep following this page for more updates! Note that we don't have yet all the info, so some tickets are not yet available!
FRIDAY 4 DECEMBER
19:00–22:00 | Brussels Beer Dinner @ Fermenthings
We open the Carnivale around the table. A special dinner built around Brussels beer culture, fermentation and a selection of bottles chosen for the occasion. We'll be having 5 plates and 6 pairings, the dinner will be vegetarian and explore the most funky products from the Urban Fermentory - 45 euro
From 22:00 | After Party & Beer with Me’s Vintage Table
Sometimes, you just have a bunch of bottles in the cellar that scream ‘please open me!’. Dennis (Beer with Me) is no longer ignoring the call. Come and taste what he has to offer. Free walk-in, €2 per tasting glass. At the same time enjoy some good DnB at La Source!

10:30-12:00 | Coffee Gone Wild: Fermentation & Coffee Tasting @ Fermenthings
Taste four uniquely fermented coffees and discover how different fermentation processes shape aroma, acidity and flavour. A small exploration of where the worlds of coffee and fermentation meet. - 15 euro

Breakfast of champions! Léo Begin from award-winning cheesemonger La Fruitière and the iconic Brasserie Cantillon pair up to bring you six cheeses alongside six vintage and special barrel-aged gueuzes. - 38 euro

12:00-14:00 | Cellar Lunch @ OSMA x Les Gastrosophes
We head down into the cellars of Tour & Taxis for lunch with Alexis, brewer, baker and ice cream maker behind OSMA. Around the table, we’ll discover his different fermentation projects through cider, kefir, bread, food and whatever other surprises are coming out of the cellar. 3 services and 4 glasses will be served in collaboration with Les Gastrosophes

‘Weeds’ are often expelled from our gardens, but they can be jam packed with flavor and good nutrients. Our partners at (On)kruid will show you how to put them to good use. Price includes samples. - 25 euro
14:00-15:30 | Shoyu Brewery Visit + TBA @ Atelier Nuu
Step inside Atelier Nuu and discover how shoyu is brewed in Brussels, from koji and fermentation to long ageing. The visit ends with a small tasting and a little something still to be announced.

Beer writer Eoghan Walsh kicks off proceedings with a brief history of Brussels in three beers (45 minutes), followed by beer memorabilia collector Thierry Van Linthoudt who will show us off some of his treasures. - 20 euro

Goodbyes are always bittersweet, but we’re sure Glenn Castelein from Alvinne has a bright future ahead of him. We’re seeing off Alvinne by showcasing some of their most influential beers
16:00 - 20:00 | A goodbye dinner @ Nuetnigenough
After three days of Brett, bottles, talks and probably not enough sleep, there is only one proper way to close the Carnivale: around a big table. We’re taking over Nuetnigenough for an informal sharing dinner, with plates of food arriving at the table, good bottles from Alvinne being opened and one last moment together before everyone heads home. - 50 euro to pay on the spot
