Your Adventure

Our day begins at the historic Salinas de Tenefé, where Atlantic seawater, sunshine, wind and generations of knowledge combine to produce traditional Canarian sea salt.

You’ll discover how the salt pans work and learn about this fascinating craft that continues to form part of the island’s cultural heritage.

From here, we continue to Cuevas de La Audiencia, an extraordinary archaeological site used by the ancient Canarians for storing and protecting grain.

A short walk along a natural trail brings us to the caves, where your guide will help bring the landscape and its history to life — explaining how communities survived, organised themselves and protected their food on this volcanic island.

Then comes one of the highlights of the day.

At La Jaira de Ana, you’ll meet a local producer, visit the farm and discover the work that goes into producing traditional goat cheese.

And you won’t just watch.

You’ll make your own fresh goat cheese, learning the process from curd to mould before preparing your cheese to take home with you.

The experience finishes with a tasting of local artisan cheeses, accompanied by olives and a fresh tomato salad, together with water and one glass of wine or beer. A soft drink may also be available depending on availability.

Difficulty

This is considered an easy to moderate experience rather than a technical hike.

However, the approach to La Audiencia follows an uneven natural path with rocky sections and inclines. You should be able to walk independently, maintain the pace of the group and feel comfortable walking on irregular ground.

The salt-pan section is relatively flat but can be exposed to sun and wind.
