We're thrilled to announce a Future of Diversity dinner with Chef Vicky Garcia from Rice, Beans & Happiness! Join us on February 23rd for a special five course meal.
Vicky and her team are on a mission to share delicious, fresh and healthy Mexican food through their meal kits, pop up events, cooking classes and catering services throughout Seattle and East side. Vicky was Born in Mexico, raised in Texas. Now having lived in the Pacific Northwest for nearly 20 years, she is proud to be from both here and there.
Rice, Beans & Happiness started in 2020 with the hope of packaging delicious food and spreading joy throughout her community during the dark days of the pandemic. Feeding friends and loved ones, spending time around the table, and sharing delicious food is Vicky's passion and love language.
Menu:
1st Course: Mini tacos de canasta (basket tacos): chicharron and pork belly, potato and chorizo bathed in a salsa de tomatillo and chile de arbol, crema and queso fresco **veg. option: frijoles guisados con queso and cactus
2nd Course: Ensalada fresca: Mixed greens, jicama, pomegranate seeds, pumpkin seeds, tiny crispy tortilla shavings and zesty lemon dressing.
3rd Course: Caldo tlalpeño: Chicken soup with zucchini,carrots and potatoes, garnished with avocado, queso fresco, tortilla strips and a chipotle aioli **veg option
4th Course: Tacos en tortilla azul nixtamalizada: Organic heirloom blue corn tortilla, sweet potato hash barbacoa garnished with microgreens, pickled onions and crema **veg option: jack fruit barbacoa and veggie mix in salsa verde
5th Course: Mamá Nene’s Capirotada (Mexican bread pudding) includes nuts and dairy **GF option available
