Dr Nicolas Bordenave will speak on the topic 'Futureproofing food and health: Opportunities and challenges through a systemic approach'.
Nicolas' talk will explore the opportunities and challenges towards developing sustainable and resilient food systems supporting the health of people and the planet. Through practical examples and case studies, the talk will highlight how implementing sustainable and healthy diets requires concerted efforts from all actors of the food system, and how it boils down to a single fundamental challenge: winning consumers.
Nicolas is Research Director at INRAE, the French National Research Institute for Agriculture, Food and the Environment and Adjunct Professor at the University of Ottowa. An active member of the scientific community, Nicolas sat on IFT's Board of Directors from 2021-2024, is Scientific Editor of the journal Comprehensive Reviews in Food Science and Food Safety, and Associate Editor of Critical Reviews in Food Science and Nutrition.
Dr Lara Ramdin will share her insights on upcycled foods.
Lara is Chief Scientist / LA Ambassador for FoodxClimate, playing a pivotal role in bridging scientific expertise with community engagement to drive meaningful action in the intersection of food systems and climate change. Lara is a Board Member and SciComm Chair of the Upcycled Food Foundation, and Chair of the IFT Trends Group. Lara's previous roles include Chief Innovation & Science Officer at Upcycled Foods, Inc., Chief Innovation Officer/Chief N&W Scientist at Dole Sunshine Company, and Head of Innovation at Molson Coors Beverage Company.
