Led by the Head of our Creative and Regenerative Kitchen, Josephine, this entry-level workshop aims to introduce participants to the art of fermentation while highlighting its numerous benefits.

The event will commence with an informative talk exploring the origins, benefits, and diverse flavours of fermented foods. Participants will gain insights into how fermentation supports gut health and overall well-being.

Following the talk, we will apply theory to practice; attendees will have the opportunity to immerse themselves in a hands-on experience. Guided by Josephine, if weather and harvest permits, participants will venture into our permaculture garden to handpick fresh herbs.. These carefully selected ingredients will be used to create a delightful lacto-fermented jar, which each participant will take home, along with a handout.

There will be a selection of ferments to taste along the session.

This workshop is designed for adults of all backgrounds, with no prior experience required. Whether you're a novice or enthusiast, this event offers a welcoming environment to learn and explore the world of fermentation.

We ask participants to bring one medium glass jar, as this helps us to keep the cost of the course down and encourages the re-use of old jars.

These tickets are refundable up to 10 days before the start of the sessions (17th April) post which they will be non-refundable.

About the host

Josephine Marchandise is the Head of the Regenerative and Creative Kitchen and Fermentation Lab at OmVed Gardens. She is passionate about growing, cooking and fermenting plants. Inspired by the wild, she always tries to start her creative process outdoors, and nurture her relationship with the soil/land before taking ingredients to the kitchen. Jo has been exploring and experimenting with all sorts of fermentation techniques for a few years. She is a member of the UK Fermenters Guild, organises a yearly fermentation festival and regularly teaches hands-on workshops at Omved Gardens in London and in France.

About OmVed Gardens:

Since 2017, we have been carefully restoring a previously tarmacked land in Highgate Village, north London, to provide a space to explore food, creativity and ecology for health and climate resilience.

Practical Information:

There is no visitor parking so we encourage you to cycle, walk or take public transport. Google Maps Directions

Our glasshouse and gardens are wheelchair accessible, but there is currently no step free access to the toilets.

Health & Safety Information:

Children are the responsibility of their parents or guardians and should not be left unattended at any time when they are on site.

Only assistance dogs are permitted.

If you have an allergy to a particular plant or insect, please get in touch before attending our site.

The gardens are a habitat for a variety of pollinators, including busy bees. Please respect them and do not approach the beehives for their safety and yours.

We have ponds - members of the public are not permitted in the pond at any time.

Do not ingest any plants, mushrooms or fungi that you find on site.

There are two first aid kits on site, one in the glasshouse and one in the dome.
