One Night: Local Wild Venison Supper

Join us on 29th November at One Kitchen, One Garden Brighton for an exclusive Wild Venison Supper, hosted in collaboration with Natural England. From 7pm until late, this one-off evening will celebrate the benefits of local wild venison, sourced through sustainable practices.
One Night
Experience a five-course menu designed by Chef Ben, featuring dishes such as venison ravioli with wild mushroom and spiced squash velouté, venison croquette with pancetta and sage, and venison steak loin with pomme puree and a red wine and currant reduction.
The meal will be served family-style, encouraging guests to engage with the flavours and share the experience.

Throughout the evening, Natural England will share more about the local impact of wild venison. There will be an insightful talk from Steve Walker, from Natural England discussing 'How eating wild venison can help manage our local woodlands’.

Steve Walker is a senior conservation officer at Natural England with over 10 years experience working on National Nature Reserves and landscape scale projects.
Specialising in woodland management, Steve is currently co-ordinating the ‘Sussex Woods’ Protected Site Strategies pilot project which seeks to explore new and collaborative approaches to managing fallow deer across West Sussex.
