Paella, the Spanish Way
Discover the technique, tradition and flavour behind one of Spain’s most iconic dishes in this immersive, hands-on cooking class. The experience begins with a chef-led demonstration of Pan con Tomate, introducing the essential foundations of Spanish cuisine—ripe tomatoes, good olive oil, toasted bread, and balance.
Working in pairs, student will build a traditional Valencia-style paella from the ground up. You’ll prepare shrimp, scallops, and mussels, build a deeply flavoured stock specifically for cooking rice, and incorporate chicken and chorizo with proper timing and technique. Throughout the class, you’ll learn how heat, sequencing, and restraint come together to create a well-balanced paella with a crisp, golden base.
A key focus of the class is understanding paella rice—why short-grain varieties matter, how absorption works and how rice choice affects texture and structure in the finished dish.
The class concludes with a relaxed, shared lunch featuring the paella you’ve prepared together—Spanish-style.
