Join Chef Gary for a hands-on class on the art of bread baking. In this class, students will make four classic breads: traditional baguette, cheese grissini, German rye and beer bread and butter brioche Nanterre.

Working with both lean and enriched doughs, students will gain confidence in the foundations of great bread baking while exploring how a poolish preferment can add flavour, structure, and depth.

Techniques covered in this class will include:

  • Preparing and using a poolish preferment
  • Mixing and developing the gluten for proper dough structure
  • Understanding proofing and fermentation
  • Shaping and scoring dough for better bake and presentation

Whether you’re new to bread baking or looking to build on your skills, this is a warm, rewarding class that will leave you with practical techniques, fresh-baked bread and plenty of inspiration for your next bake at home!
