Full Circle Dinner With ArnieTex

At Still Austin Whiskey Co., sustainability is at the heart of what we do. We use 100% Texas-grown grains, and after distillation, we send the spent grains to local farms to nourish free-roaming livestock. This “farm-to-still-to-farm” cycle promotes sustainability and produces some of the finest beef in the country.

Experience this firsthand at our Full Circle Dinner — a sustainable carne asada cookout where legendary pitmaster Arnie "ArnieTex" Segovia will cook a whole steer from Double J Ranch, raised exclusively on Still Austin spent grains.

Tickets include a 4-course dinner curated by Arnie and Chef Steven Lopez of San Antonio, paired with a specialty ArnieTex cocktail, and live music from The Tiarras.

FIRST COURSE: Sope de Picadillo
Traditional, Mexican fried corn cakes topped with beef tallow refried beans and ground beef. Finished with charred avocado, and salsa macha.

SECOND COURSE: Smoked Barbacoa Tetela
Triangle-shaped masa pocket filled with queso Oaxaca and topped with tender, slow-cooked shredded beef, seasoned with flavorful chilies and spices, pickled red onions, salsa, and lime.

THIRD COURSE: Still Austin Bourbon Beef Fajita Taco
A trio of juicy, mesquite-grilled skirt, sirloin, and hangar steak that's been basted with Still Austin Bourbon and topped with a vibrant pico de gallo.

DESSERT: Pecan-Pepita Pie Bar
A twist on a Texas favorite! This pecan pie bar includes nutty pumpkin seeds and is topped with a Still Austin Bourbon caramel sauce, chantilly cream, and chocolate pearls.
