Named after the constellation of the flying fish, Volans Tequila has truly found its place amongst the stars in the world of Tequila, and in the Sip Tequila portfolio. Volans is made at the El Pandillo Distillery in Jesus Maria, Jalisco by Master Distiller Felipe Camarena and his team and managed by husband and wife team Chad and Cristina Allen, as well as Chad’s mother, Lonnie Allen.
From the beginning, their goal as a company was to offer the best-tasting Tequila, with the best ingredients and zero additives. Every single detail that goes into production, from the selection of single estate agaves to the yeast that has been in the Camarena Family for many generations, to the best quality water in the Los Altos Region.
El Pandillo (home of ArteNOM 1579, G4, Don Vicente and Tequila Terralta) where Volans is produced, is located at a higher elevation in Jesus Maria where the water is pristine, they have a deep well with excellent minerality, and the distillery roof acts as a large rainwater collection system that goes into a 50k gallon cistern. Agaves are then cooked in a traditional stone oven for over 36 hours; the steam comes out on top and bottom for a more even cooking. The juice is extracted with one of a kind mechanical Tahona nicknamed "the Felipestein." Next, the mosto is fermented in open-air tanks. The mosto is double distilled in beautiful copper-pot stills.
All along the way, there are innovative processes that Distiller, Felipe Camarena created to make the distillery more sustainable. Both Volans Blanco and Extra Anejo tequilas are made with all three sources of water deep well, spring and rainwater. The Extra Añejo is aged in used American white oak barrels in an underground cellar for over 3 and a half years. You can find notes of cooked Agave, vanilla, slightly oaky, and minerality. Difference between both is that the Blanco is oxygenated, with notes of cooked Agave, minerals, pepper, citrus, and anise, we just loved the character and flavor, with the surprising instant gratification. It's like a great first impression on every sip. And we are even going to enjoy it at Still Strength during the evening!
In partnership with The Wine and Cheese Place (TWCP) and Bonded Beverage, our group has been selected to host co-founder, Chad Allen for an amazing evening as we will walk through many of the best spirits Volans brings to the world of Tequila!
Throughout the evening, we will enjoy a welcome cocktail created especially for the evening followed by a led sampling of Blanco, Still Strength Blanco, Reposado... and maybe even something special just for the event. We will have TWCP on site to take bottle orders as well.
Along with the evening's tasting experience, we will also be offering a 1st Ever Bottle of our Very Own SLTS/TWCP Single Barrel Reposado with Volans for preorder which will be ready for pickup in May!!!
Additionally, for every bottle of Volans SINGLE BARREL REPOSADO TWCP/SLTS purchased that night, purchasing members will get TWO raffle tickets for a killer tequila raffle including Fortaleza Blanco and other rare tequila goodies compliments of TWCP. For every bottle of any other Volans members will receive ONE raffle ticket.
As we begin the evening we will also be serving some amazing food compliments of Tequila Restaurant! For over 20 years, they’ve been serving home style Mexican food with love and they will be sharing their passion for authentic cooking with us!
