TAM is a new Thai food pop-up supper club cooking food from all four regions of Thailand.

With respect to its origins, we aim to acknowledge the place, country, culture and cuisine from where these dishes come.

Where do you start with Thai food? Beyond the caricature of offerings often found on our high streets across England and beyond - you know the ones, green curries and satay - the cuisine of Thailand is vast. It’s woozy, simple, complex, enchanting, spicy, funky, confronting, enlightening, adaptive, unexpected and - maybe most importantly - damned delicious!

For me, Nick, the guy in the kitchen, and a westerner - a ‘farang’ - it is cuisine that is both beguiling and inspiring.

With TAM our aim is to share some of the Thai food that we love, and also some of the dishes that are not always readily available here, in Dorset, England.
