Back by popular demand after a fantastic dinner last year, The Adobros - an award-winning Filipino catering outfit based in London, headed up by chef Mark - are coming down to Louie on Sea in buzzing Margate for a late May weekend of delicious eats and fantastic beats, as part of their 2026 Summer Series.

Drawing upon much-loved family recipes, various regional cuisines and his experiences of cooking in London, Mark has created an experience that he hopes showcases the best of the Filipino food culture he grew up with: the warm welcome, the social sharing, the festive feasting and the distinctively delicious flavours of the Philippines.

So what can you expect? A four-course meal that introduces you to the culinary delights of the Philippines: the cheek-puckering tamarind tang of sinigang, translated into gazpacho form; the zing and immediacy of kinilaw, a type of raw fish crudo that is born of Filipinos' relation with the sea; the umami-rich sourness of pork belly adobo, an ode to our unofficial national dish of braising in vinegar; the freshness of sweet and tart heritage tomatoes in a coconut vinegar ensalada; and the decadent creamy lusciousness of leche flan, the cherished Filipino crème caramel. And, as part of Mark's mission to make Filipino cuisine as accessible to as many people as possible, vegan alternatives will be available on the night (please specify when booking).

One / Isa

  • Sinigang Gazpacho - sour tamarind gazpacho, malunggay oil, cockles
    • Vegan alternative: sour tamarind gazpacho, malunggay oil, fried tofu (VG)


Two / Dalawa

  • Kinilaw - market fish crudo cured in Tarsier Gin, finished off in cane vinegar and calamansi, with garnishings
    • Vegan/vegetarian alternative: Piaparan na Langka - young jackfruit, palapa, grated coconut, served in bitter leaves with a palapa sprinkle (VG)


Three / Tatlo

  • Pork Belly Adobo - pork belly braised in cane vinegar, soy sauce, garlic, bay leaves and black pepper
    • Vegan/vegetarian alternative: Tempeh Adobo - crispy tempeh braised in cane vinegar, soy sauce, garlic, bay leaves and black pepper (VG)
  • Ensaladang Kamatis - Isle of Wight heritage tomatoes, brined shallots, rocket, sweetened coconut vinegar (VG)
  • Jasmine Rice (VG)


Four / Apat

  • Leche Flan and Brown Butter Polvoron - Filipino crème caramel with latik (burnt coconut curds), served with Filipino brown butter 'shortbread' (V)
    • Vegan alternative: Pandan Pannacotta and Coconut Polvoron - with latik (burnt coconut curds), served with Filipino coconut 'shortbread' (VG)

FAQs

What dietary requirements can you cater for?

  • Where required, a vegan/vegetarian alternative can be provided - please notify when booking. Other than that, unfortunately other alternatives cannot be provided, however the dinner will be nut-free, largely gluten-free and mostly dairy-free. And there is only one meat dish on the menu too! If you have any further questions, please do get in touch

Is the dinner BYOB?

  • No, but there will be a range of great drinks available to buy from Louie on Sea

What is your cancellation policy?

  • Please get in touch if you wish to cancel your booking; refunds are available up to 4 days before the dinner

Are children welcome?

  • Adventurous eaters who are happy to share the same menu and can eat their own adult portions are most welcome (and would need a ticket). But please do note that: there will be alcohol and drinking present - so this may not be so appropriate for young children
