Join Brian Harman of Cape Harbor Shellfish for a guided tasting that brings the Delaware Bay straight to your glass and plate.
Brian has spent years on the tidal flats helping shape the modern New Jersey oyster scene, growing oysters known for their freshness, balance, and distinctive sense of place. At Tria, we source our oysters exclusively through him. In this class, you'll explore five oysters and five wines, thoughtfully paired to highlight the natural harmony between sea and vineyard.
Brian will share how oysters are grown — from tiny seed to harvest — and how salinity, water conditions, and farming techniques shape flavor. Lauren will guide you through the wines, showing how acidity, texture, and minerality interact with each oyster. Expect a range from crisp and saline to creamy and complex, and discover how subtle differences can create entirely new experiences with every pairing.
