Denison Cellars Wine Dinner at J. Selby's in Saint Paul, MN

Multi-course DENISON CELLARS WINE DINNER at J. Selby's (the city's top vegan restaurant).
With special guest: St. Paul native TIM WILSON, founder and winemaker, Denison Cellars.

Tim Wilson grew up on Lincoln Avenue and Prior, in the heart of Mac-Groveland in Saint Paul. Fate led him to Oregon, where he became a top-notch winemaker for several of the best wineries in the Willamette Valley. In 2009, after establishing connections with some of the top vineyards in the region, he and his wife Denise struck out on their own and formed Denison Cellars.

This winery is as boutique as it comes, making only 1000 cases of wine annually. Some of their single vineyard production is made in crazy tiny quantities, like only 50 cases. Denison Cellars wines have a worldwide following (especially in Japan) and are not easy to find.

As you arrive, we'll start with some meet-and-greet rosé, then move into a multi-course vegan dinner paired perfectly with a range of Denison Cellars wines, including the rarest single-vineyard Pinot Noirs. Over the course of the dinner, you'll hear Tim's stories, the background on his winemaking philosophy, opinions on Willamette Valley and Pinot Noir in particular, and much more. We'll finish with dessert and coffee before calling it a night.
