Taste the wines of Domaine Pignier
A 7th-generation family estate in Montaigu (Côtes du Jura) tracing back to 1794, Demeter biodynamic since 2003 across 15 hectares of Chardonnay, Savagnin, and the rare Petit Béclan and Enfariné, vinified in 13th-century Carthusian cellars.
The biodynamic conversion in 2002 and the Demeter certification in 2003 placed Pignier among the earliest fully biodynamic estates in the Jura, alongside Domaine André et Mireille Tissot in the north and the broader Sud-Revermont group. The biodynamic work uses the standard preparations (500 horn manure, 501 horn silica) and follows the lunar calendar for major operations. The cellar approach is consistent with the southern Jura biodynamic style: native-yeast fermentations, no fining or filtration on most cuvées, modest sulfur use, and long élevage. The 13th-century Carthusian cellar provides natural temperature stability that supports the long aging windows. Vin Jaune, Vin de Paille, and the dry whites and reds all share the same fundamental cellar discipline, with cuvée-level adjustments depending on the variety and parcel.
