Setting up a local food business - For small producers

You raise livestock, hens, or grow your own vegetables and fruit. Now you are wondering if there is a way to sell your produce locally and develop your own local food business. Perhaps you have been selling a wee bit locally and are thinking of scaling up.

But where to start?

With Jo Hunt, of Knockfarrel Produce in Dingwall, and other inspiring small-scale food producers, our training programme will take you step-by-step through the process of setting up a local food business using your own produce.

Based on years of experience, Jo et al will guide you through the practicalities, the potential pitfalls, the rules & regulations, how to make the figures add up, what support is available, selling and marketing, and more..!

Open to crofters, smallholders, farmers and other small-scale producers.

Bigton Community Hall

Tuesday 2nd March 2027
9.30 to 5pm day 1 with an evening session 7pm to 9pm

Wednesday 3rd March 2027
9.00am to 4.30pm

There will be a programme of class-based sessions with input from Jo about the key factors you need to consider to turn your business idea into a practical enterprise. You will visit Withyburn Croft Tours in Bigton where Stacey and family have taken a creative approach to making a living from their croft produce, and find out about some of the challenges they have faced and how they have resolved them. Stacey is also preparing lunch for everyone! You will also be joined by Penny at Transition Turriefield in Sandness, a community veg growing project, as well as Jakob Eunson who will be talking about Kye Sassermaet

By the end of the course you should have a plan for your next steps and feel inspired to take them!

Withyburn Croft Tours

At Withyburn Croft, Stacey and family raise Dexter Cattle, Shetland sheep, goats and hens, as well as having a well-stocked vegetable plot. They offer croft tours with a chance for folk to get up close to the animals, as well as high end culinary experiences with meals cooked from local produce (from Withyburn if available) by Shetland chef, Akshay Borges.

Transition Turriefield

The committed folk at Transition Turriefield have been experimenting with and successfully growing veg in windy Shetland since 2008. They grow without artificial inputs and minimal machinery. Encouraging others to produce their own veg is a key mission for them and they have delivered various projects including Grow Shetland ending in 2024.

Kye Sassermaet

Jakob Eunson of Uradale Farm has developed his own brand Kye Sassermaet, based on traditional Shetland recipes, and produced from the Shetland Kye at Uradale Farm. Kye Sassermaet uses the cheaper parts of the animal which are transformed by Jakob (including the butchery as he is a qualified butcher) into a delicious food product.
